The goal of this build is to power-level Smithing to 80 early in the game using pickpocket. You'll essentially play a Thieves Guild member who uses theft skills to steal the complete knowledge from Balimund, the Riften blacksmith.

The Pickpocket Method to 75 Smithing
First, grab 3,000 gold, head to Riften, and join the Thieves Guild. You'll get the Guild Boots/Gloves that grant a 15% Pickpocket bonus. Do this early, preferably before level 10.
The Strategy:
Prep: Put one point into the Light Fingers perk and equip your Thieves Guild gear.
Training: Pay Balimund to train your Smithing (start with 1 or 2 levels) and save the game.
The Loop: Use Pickpocket to steal your gold back from him. Because you're low level, the XP from both Smithing and Pickpocketing will make you level up instantly.
Maximize: Since you can only train 5 times per character level, train 5 levels, steal the gold back, level up your character, and repeat.
Perks: Keep dumping points into Pickpocketing to make it easier, and always save before each attempt.
Following this, you'll hit 100 Pickpocket and 75 Smithing in under 20 minutes. Once you're done, you can "Legendary" the Pickpocket skill to get your perk points back.
Final Push: Getting to 80 Smithing
Your job as a thief is done; now it’s time to hit level 80 Smithing.
The Final Steps:
Level 76: After the training loop, your XP bar will be nearly full. Just craft a single iron dagger to officially hit level 76.
Skill Books: To bridge the gap from 76 to 80, the easiest way is to hunt for Smithing Skill Books.
Easy Access: There are plenty scattered across Skyrim in easy-to-reach spots—you can even find some in the Ebony Mine (Gloombound Mine).
Just grab those books, and you're ready to craft your Ebony set.
Farming Ebony Ore
Head over to Gloombound Mine. It's the best spot to haul a massive amount of Ebony Ore, enough to craft your full armor set, sword, and dagger.
Pro Tip: Don't miss the Smithing skill book right at the mine entrance!
I highly recommend grabbing a Fortify Smithing potion before you start. Use it to refine your gear at a workbench or whetstone to squeeze out every bit of extra damage and protection.
Vegetable Soup
This item is a game-changer: it grants you infinite power attacks. You can craft it at any cooking pot using these ingredients:
Cabbage
Potato
Leek
Tomato
Dual Wielding
Equip the dagger in your left hand and the sword in your right hand. This trick makes your dual-wield power attacks swing with the speed of the dagger, giving you massive DPS.
Maximum Attack Speed
The character is basically complete, but if you want even more speed, I recommend the Bloodthirst sword. You can get it during the sewer quest in Riften.
Pair it with the Elemental Fury shout to become an absolute whirlwind on the battlefield.
Magic Defense
To add a solid layer of magic defense, grab the Atronach Stone and complete the "The Book of Love" quest for Mara’s blessing.

I think you have a nice backbone of a build here, you have a core of combat tactics and a beginning of a roleplay: An orc who couldn't learn blacksmithing as the rest of the orcs. Maybe he was abandoned as a baby and raised by thieves or on the streets. Keep at it!
